Summary
In his new, must-read history of food, acclaimed historian Massimo Montanari traces the development of medieval tastes - both culinary and cultural - from raw materials to market and their reflections in today's food trends. He immerses readers in the passionate debates and bold inventions that transformed food from a simple staple to a potent factor in health and symbol of social and ideological standing, tying the ingredients of its fascinating evolution to the growth of human civilization. Montanari returns to the prestigious Salerno school of medicine - the mother of all medical schools," to plot the theory of food that took shape in the twelfth century. He reviews the influence of the Near Eastern spice routes, which introduced new flavors and cooking techniques to European kitchens, and reads Europe's earliest cookbooks, which took cues from old Roman practices valuing artifice and mixed flavors. Dishes were largely low-fat, and meats and fish were seasoned with vinegar, citrus juices, and wine. Other dishes, habits, and battles that mirror contemporary culinary identity involve the refinement of pasta, polenta, bread, and other flour-based preparations; the transition to more advanced cooking tools and formal dining implements; the controversy over cooking with oil, lard, or butter; dietary regimens; and the consumption and cultural meaning of water and wine. As people became more cognizant of their physicality, individuality, and philosophical place in the cosmos, Montanari shows, they adopted a new attitude toward food as well, investing as much in its pleasure and possibilities as in its basic acquisition.

Summary
Throughout the history of Arab-Israeli peace negotiations, security has been the most important-and most challenging-issue for Palestinians, Israelis, and their neighbors. This study examines key external security issues that must be met for there to be a successful independent Palestinian state following a peace agreement with Israel. It makes proposals for an international (NATO-led) peace-enabling force, Palestinian security forces, and liaison and confidence-building cooperation between Palestine and Israel. This study also examines Palestinian policing, the nature of security arrangements along the Palestinian-Israeli border, counterterrorism efforts, intelligence functions, and broader Middle East security efforts. Summary
In this book there is no intention to bury or to praise suicide bombers. Instead, the text explores the controversy regarding the double standards, prejudice, and distortion with the concepts of "suicide bombers/warriors," "terrorism" and "martyrdom." Frequently, the "eyes of the beholders" and the political/religious orientation and loyalties to "one's tribe" color what someone perceives. For example, if you carry a bomb in your hand, you are called a terrorist, but if an F-16 carries bombs and kills civilians, the pilot could be labeled a war hero or freedom fighter. The contributors of this.

Summary
Not too long ago industry almost monolithically viewed environmental considerations as an expense--sometimes as a nuisance. That is beginning to change. Industry leaders now see the advantage of going beyond complying with environmental regulations, as had been their wont, and incorporating the search for environmentally sound business practices into their research and development. This report features case studies of four industry leaders--DuPont, Intel, Monsanto, and Xerox--and discusses how these companies view environmental technology investments. The information is based on a series of interviews with senior R & D managers and environment, health, and safety personnel along with the relevant literature. At the request of the Office of Science and Technology Policy in the Executive Office of the President, the authors have provided the views of a subset of one of the key stakeholders in environmental policy, industry, which have heretofore not received a lot of emphasis.
