Stripping away the intimidation factor of creating such decorations, Sear guides readers with inviting, clear instructions through cakes, cookies, and candy that highlight botanicals such as rose petals, cornflowers, lemon verbena, and lavender. Introductory information on pressing and storing flowers and leaves, drying flowers, and baking basics gets home bakers up and running. Glorious creations are picture-perfect in Instagram-worthy selections such as fluffy Meringue Lollies, each monochromatically decorated; a three-layer Orange and Almond "Touch of Frosting" Cake showing home bakers that less cream cheese frosting is often more; and Dried Flowers Chocolate Bark, where hand-cracked shards of white chocolate showcase dried flowers in purple and yellow hues. None are snap-fingers easy; on the other hand, the spectacular results may well be worth the search for ingredients and the often-extensive labor involved. There's an illustrated dictionary of flower flavors upfront as well as very thorough directions for storing and preserving floral syrups and the like, prepping a cake (with step-by-step photographs), and cake basics, building on a very vanilla sponge cake laced with buttercream. Every treat (not all are cakes) features times for prep, chilling, and baking; equipment; exquisite color photographs; and instructions. And innovation rules: She uses Rice Krispies treats as 3D structural foundations for a cake topper. Experienced bakers will have a tough time choosing: sugar or meringue lollies?
