Who will argue with success? Number four of Douglas' recipe compilations (America's Most Wanted Recipes, 2009; More of America's Most Wanted Recipes, 2010; and America's Most Wanted Recipes Without the Guilt, 2011, precede it) leaves no shortcut untaken to emulate sweet concoctions from the likes of Anthony's, KFC, and the Waldorf Astoria. Got a hankering for McDonald's apple muffins? Combine apple pie spice, yellow cake mix, and apple pie filling with three eggs - and you're perilously close to duplicating the chain's treat. Cheesecakes from, yes, the Cheesecake Factory? French silk pie a la Baker's Square? Arby's apple turnovers? Those are just a few of the 100-plus recipes featured. Some pragmatic baking tips, such as the difference between soft and stiff peaks and how to avoid pie-shell shrinkage, precede the collection proper. Otherwise, Douglas assumes readers know a whisk from a gelato maker, a spatula from a blender. Recipes appear in alphabetical order by restaurant. Almost every U.S. chain is represented, also some high-end establishments. Don't expect calorie and nutritional counts or even much information about the restaurants.
