Tracing the transformation of culinary trades in France during the Revolutionary era, Jennifer J. Davis argues that the work of cultivating sensibility in food was not simply an elite matter; it was essential to the livelihood of thousands of men and women. Combining rigorous archival research with social history and cultural studies, Davis analyzes the development of cooking aesthetics and practices by examining the propagation of taste, the training of cooks, and the policing of the culinary marketplace in the name of safety and good taste. French cooks formed their profession through a series of debates intimately connected to broader Enlightenment controversies over education, cuisine, law, science, and service. Though cooks assumed prominence within the culinary public sphere, the unique literary genre of gastronomy replaced the Old Regime guild police in the wake of the French Revolution as individual diners began to rethink cooks' authority. The question of who wielded culinary influence -- and thus shaped standards of taste -- continued to reverberate throughout society into the early nineteenth century. This remarkable study illustrates how culinary discourse affected French national identity within the country and around the globe, where elite cuisine bears the imprint of the country's techniques and labor organization.
Format: Electronic Resources
Summary of Julia Child & Alex Prud'homme's My Life in France. ent://SD_ILS/0/SD_ILS:306785 2024-05-19T17:25:01Z 2024-05-19T17:25:01Z by Media, IRB.
Call Number 641.59439999999995
Publication Date 2022
Format: Electronic Resources
Enacting Brittany [electronic resource] : Tourism and Culture in Provincial France, 1871?1939 ent://SD_ILS/0/SD_ILS:33947 2024-05-19T17:25:01Z 2024-05-19T17:25:01Z by Young, Patrick.
Call Number 306.48190944109041
Publication Date 2012
Summary Efforts to preserve, display and promote Breton cultural differences in the late nineteenth and early twentieth centuries marked a significant advance in heritage tourism, and a departure from what is commonly perceived to be a French intolerance of cultural diversity within its borders. The use of computers to collect, store and manipulate chemical information is at the heart of chemoinformatics. These methodologies, whose main target thus far has been the pharmaceutical field, are general and can be applied to other types of chemical data sets, such as those containing food chemicals. While the use of chemical information methodologies to address food-related challenges is still in its infancy, interest is growing and will continue to do so as the methods prove useful, particularly for providing practical solutions to food industry challenges. Foodinformatics gives an overview of basic concepts, applications, tools and perspectives of the emerging field of foodinformatics. The book is an important addition to the literature and will be of interest of food chemists, nutritionists, informaticians and scientists of related fields. Fisher wrote about her ideal kitchen. In her subsequent publications, she revisited the many kitchens she had known and the foods she savored in them to express her ideas about the art of eating. M.F.K. Fisher among the Pots and Pans, interspersed with recipes and richly illustrated with original watercolors, is a retrospective of Mary Frances Kennedy Fisher's life as it unfolded in those homey settings--from Fisher's childhood in Whittier, California, to the kitchens of Dijon, where she developed her taste for French foods and wines; from the idyllic kitchen at Le Paquis to the isolation of her home in Hemet, California; and finally to her last days in the Napa and Sonoma Valleys. M.F.K. Fisher was a solitary cook who interpreted the scenario of a meal in her own way, and M.F.K. Fisher among the Pots and Pans provides a deeply personal glimpse of a woman who continues to mystify even as she commands our attention.
Format: Electronic Resources
Where to Drink Wine : The Essential Guide to the World's Must-Visit Wineries. ent://SD_ILS/0/SD_ILS:300316 2024-05-19T17:25:01Z 2024-05-19T17:25:01Z by Losh, Chris.
Call Number 641.22
Publication Date 2019
Summary A definitive, practical and colourful guide to some 400 of the world's best wineries.
Format: Electronic Resources
Let me tell you about wine [electronic resource] : a beginner's guide to understanding and enjoying wine / Oz Clarke. ent://SD_ILS/0/SD_ILS:149446 2024-05-19T17:25:01Z 2024-05-19T17:25:01Z by Clarke, Oz
Call Number 641.8
Publication Date 2014
Summary You dont need to know all about wine regions or how wine is made to choose wine with confidence. As journalists they have the run of the country, following stories that take them to places where most Americans have never been--from the back roads of Appalachia to an underground village of homeless people in the New York City subway system. Tight on time, and even tighter on budget, the Saulnier sisters slid easily into a drive-thru diet. Along the way they dined on: * Nathan's Famous hot dogs at the annual hot dog eating contest in Coney Island * Snapping Turtle Soup as prepared by the Native American elders of the Alabama-Coushatta Tribe * Cheesy Grits from the Armadillo Diner in Texas * And Burgers, burgers, burgers everywhere! As the Saulnier sisters adopted the American way of eating, their relationship to food shortly changes; they soon gain weight--and lose their self-esteem. This new diet is especially hard on Victorine, who temporarily abandons her vegetarianism. It's not until they meet a couple running an organic farm in upstate New York that they realize how far they've strayed from their native food values--and learn that you can eat well in America, too.
Format: Electronic Resources
Hubert Keller's Souvenirs : Stories and Recipes from My Life. ent://SD_ILS/0/SD_ILS:305692 2024-05-19T17:25:01Z 2024-05-19T17:25:01Z by Keller, Hubert.
Call Number 641.5944
Publication Date 2012
Summary Souvenirs is a memoir cookbook written by the multitalented Hubert Keller: chef, restaurateur, and Frenchman. Through personal stories and 120 recipes, the book explores his classical training and traces his development as a creative superstar chef. Keller apprentices in a Michelin three star-rated restaurant at the age of 16. He moves from his native Alsace, to southern France, and is inspired by the cuisine of the sun while working with the great French chefs of his time, Roger Vergé, Paul Bocuse, and Gaston Lenôtre. He learns to adapt to challenging new environments in South America, and the United States, and charts his own path into the newest frontiers of the restaurant business. The book is organized by seminal themes in his life; it starts with his family in France, and ends back there in the "Holiday" chapter. The myriad recipes, which have been adapted for the home cook, are intertwined with 125 of Eric Wolfinger's luscious images of family and friends, food and cuisine, and the places and landscapes of France, Las Vegas, and San Francisco, which all make up chef Keller's life.
Format: Electronic Resources
Bottled Poetry : Napa Winemaking from Prohibition to the Modern Era. ent://SD_ILS/0/SD_ILS:307742 2024-05-19T17:25:01Z 2024-05-19T17:25:01Z by Lapsley, James T.
Call Number 641.220979419
Publication Date 2022
Summary California's Napa Valley is one of the world's premier wine regions today, but this has not always been true. James T. Lapsley's entertaining history explains how a collective vision of excellence among winemakers and a keen sense of promotion transformed the region and its wines following the repeal of Prohibition. Focusing on the formative years of Napa's fine winemaking, 1934 to 1967, Lapsley concludes with a chapter on the wine boom of the 1970s, placing it in a social context and explaining the role of Napa vineyards in the beverage's growing popularity. Names familiar to wine drinkers appear throughout these pages--Beaulieu, Beringer, Charles Krug, Christian Brothers, Inglenook, Louis Martini--and the colorful stories behind the names give this book a personal dimension. As strong-willed, competitive winemakers found ways to work cooperatively, both in sharing knowledge and technology and in promoting their region, the result was an unprecedented improvement in wine quality that brought with it a new reputation for the Napa Valley. In The Silverado Squatters, Robert Louis Stevenson refers to wine as "bottled poetry," and although Stevenson's reference was to the elite vineyards of France, his words are appropriate for Napa wines today. Their success, as Lapsley makes clear, is due to much more than the beneficence of sun and soil. Craft, vision, and determination have played a part too, and for that, wine drinkers the world over are grateful. This title is part of UC Press's Voices Revived program, which commemorates University of California Press's mission to seek out and cultivate the brightest minds and give them voice, reach, and impact. Virginia Housewife is also recognized as the nation's first regional cookbook with a focus on southern-style specialties, some appearing in print for the first time (Ochra Soup, Curry of Catfish, Gumbo, Chicken Pudding, Apoquiniminc Cakes). But Randolph also includes local variations of recipes from the West Indies, New England, Spain, and France, all reflecting the influence of many cuisines on Southern cooking. Diverse offerings from far-away places include Dough Nuts, Gaspacho, Ropa Vieja, as well as a number of delightful ice cream recipes including, black walnut, quince, pear, citron, and almond. An immediate success, Virginia Housewife was republished at least nineteen times before the Civil War.  For Mrs. Mary, "The grand Arcanum of management lies in three simple rules: Let everything be done at a proper time, keep everything in its proper place, and put everything to its proper use." To this end, much more than just a cookbook, The Virginia Housewife is a complete lifestyle reference providing an introduction to the food, culture, and manners of the antebellum South, as well as housekeeping instructions on topics ranging from soap making to herb drying and silver cleaning-everything that a woman of the nineteenth (or the twenty-first) century might desire to know.  This facsimile edition of Mary Randolph's Virginia Housewife was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. Founded in 1812 by Isaiah Thomas, a Revolutionary War patriot and successful printer and publisher, the Society is a research library documenting the life of Americans from the colonial era through 1876. The Society collects, preserves, and makes available as complete a record as possible of the printed materials from the early American experience. The cookbook collection includes approximately 1,100 volumes.
Format: Electronic Resources
Internet Gambling [electronic resource] : Current Research Findings and Implications ent://SD_ILS/0/SD_ILS:32304 2024-05-19T17:25:01Z 2024-05-19T17:25:01Z by Gainsbury, Sally.
Call Number 344.0542
Publication Date 2012
Format: Electronic Resources
Spiritual Bankruptcy : A Prophetic Call to Action. ent://SD_ILS/0/SD_ILS:291795 2024-05-19T17:25:01Z 2024-05-19T17:25:01Z by Cobb, John B. Eduardo Saenz Rovner argues that Cuba's historically well-established integration into international migration, commerce, and transportation networks combined with political instability and rampant official corruption to help lay the foundation for the development of organized crime structures powerful enough to affect Cuba's domestic and foreign politics and its very identity as a nation. Saenz traces the routes taken around the world by traffickers and smugglers. After Cuba, the most important player in this story is the United States. The involvement of gangsters and corrupt U.S. officials and businessmen enabled prohibited substances to reach a strong market in the United States, from rum running during Prohibition to increased demand for narcotics during the Cold War. Our list includes French cooking, Swedish cooking, Austrian and German cooking, Cajun cooking, as well as books on jerky, canning and preserving, peanut butter, meatballs, oil and vinegar, bone broth, and more. While not every title we publish becomes a New York Times bestseller or a national bestseller, we are committed to books on subjects that are sometimes overlooked and to authors whose work might not otherwise find a home.
Format: Electronic Resources
Technology Advances and Innovation in Wine Tourism : New Managerial Approaches and Cases. ent://SD_ILS/0/SD_ILS:312533 2024-05-19T17:25:01Z 2024-05-19T17:25:01Z by Sigala, Marianna.
Call Number 663.2
Publication Date 2023
Format: Electronic Resources
A Kaizen Approach to Food Safety : Quality Management in the Value Chain from Wheat to Bread. ent://SD_ILS/0/SD_ILS:279649 2024-05-19T17:25:01Z 2024-05-19T17:25:01Z by Hill, Victoria.
Call Number 664
Publication Date 2014
Summary This book examines food quality, product conformance, reliability and safety, starting with wheat and ending with its value chain transformation into bread.
