Food systems receive growing attention because they link various sustainability dimensions. Restaurants are at the heart of these developments, and their decisions to purchase regional foods, or to prepare menus that are healthier and less environmentally problematic have great influence on food production processes. This book is systematically designed around understanding the inputs and outputs of the commercial kitchen as well as what happens in the restaurant from the perspective of operators, staff and the consumer. The book considers different management approaches and further looks at the role of restaurants, chefs and staff in the wider community and the positive contributions that commercial kitchens can make to promoting sustainable food ways. Case studies from all over the world illustrate the tools and techniques helping to meet environmental and economic bottom lines. This will be essential reading for all students of hospitality and the culinary arts"--
Format: Books
Revenue Management in the Lodging Industry : Origins to the Last Frontier.ent://SD_ILS/0/SD_ILS:3090772024-05-19T15:33:02Z2024-05-19T15:33:02Zby Vinod, Ben.
Call Number 647.940681
Publication Date 2022
Format: Electronic Resources
Mountain Resort Marketing and Management.ent://SD_ILS/0/SD_ILS:3124902024-05-19T15:33:02Z2024-05-19T15:33:02Zby Solelhac, Armelle.
Call Number 647.94068
Publication Date 2021
Summary Mountain resort tourism is a competitive environment, experiencing increasing growth in new markets such as China, that require the knowledge and skills developed by mature markets. In that time, five more drugs from this class, atorvastatin, pravastatin, fluvastatin, rosuvastatin and simvastatin, have been approved by the FDA. Statins, among the top ten most commonly prescribed drugs in the U.S., are now recommended as first-line treatments by all major regulatory agencies in the U.S. and elsewhere. As shown in numerous clinical trials, statins are extremely powerful and effective in reducing LDL cholesterol, accompanied by a significant reduction of cardiac events and strokes. As a class, they are well-tolerated by most patients and are easy to administer. However, the withdrawal of cerivastatin (Baycol) from the market in 2001 due to severe myopathy in some patients, has led to increased concern among clinicians with respect to this and other side effects, such as liver and kidney disease. Some studies suggest that this has led to increased reluctance among clinicians to initiate a statin drug regimen or to adjust dosage to increase therapeutic effect. While a small minority of patients do develop serious complications while on statin therapy, current clinical evidence strongly suggests that the benefits of timely statin administration significantly outweigh the risks. Oxford American Pocket Notes: Statin Prescribing Guide aims to provide clinicians with concise, easily accessible guidance on prescribing statins in various clinical settings. This volume features evidence-based discussion on the indications, pharmacokinetics and safety profiles of the available statins and how these properties translate into selection of the appropriate treatment regimen for the individual patient. Useful tools, such as treatment algorithms, charts, tables and illustrations greatly help enhance the value of this volume as a portable reference tool.
Format: Electronic Resources
Hotel reception services / compiled from Front office skills: a practical approach by Vivienne O'Shannessy.ent://SD_ILS/0/SD_ILS:277092024-05-19T15:33:02Z2024-05-19T15:33:02ZCall Number 647.94 HOT
Publication Date 2009
Format: Books
Managing front office operations / Michael L. From the original concept, through each part of the process, it provides an essential guide for students and professionals on how to manage hospitality facilities to their best effect, using a model-based insight into the process in an informed, but non-technical way. Now in its second edition, this successful text has been updated with new international case studies from companies such as MyTravel, Disneyland Paris Hotel, Elysium Beach Resort Cyprus and many others. It also includes new chapters from well-known authors. With contributions from both academics and practitioners, this book looks at design, building issues, operational relationships, and therefore provides the hospitality manager with insight into how these areas work and what they need to know in order to get the best out of them.
Format: Books
Hospitality operations : a systems approach / Peter Jones ... Premises and services operations management are considered through the application of generic management techniques. In hotels, buildings, land, assets, people and services are essential resources which need to be managed to meet organizational objectives. Through practical techniques and examples Jones and Jowett show how these facilities can be continuously improved to increase competitiveness and meet the ever changing needs of the customer. Managing Facilities is a concise guide for hotel, hospitality and facilities managers. It is also an excellent text for undergraduate and postgraduate students of hospitality management.
Format: Books
Front office management and operations / Linsley T. DeVeau ...
